Chocolate Covered Caramels

Unwrap Dad's home made caramels.  (Try not to eat them.)  :^)

I started out with my father's home made caramels.  I will do what I can to talk him into sharing his recipe with us.  They are delicious.  He was disappointed because this one batch turned out chewier than most and seeing the square shapes, I got excited!  They were the perfect consistency for dipping in chocolate and taking to the next level.

Cut caramels to desired size (if needed)

I found my old "Turtle" mold ~ double fun!
Have a pecan and caramel ready to go for each mold.

Start the water boiling in the bottom of the double boiler.
I broke up a dark chocolate candy bar and placed in the top.
This is not the best choice for chocolate but it was my best option for the day.

The caramels that don't make it into the turtles will soon be transformed. 
I have these laying on my baking sheet.  It is pliable but heavy duty enough to be moved into the refrigerator or freezer.

I put some white chocolate chips in a bowl ready to melt at the end.

Doesn't melting chocolate look delicious.  I decided to do this last minute so the only think I could find was a candy bar (not the best choice but it works.)

Sorry, when working with candy there isn't always the time to stop and take pictures.
Dip each caramel in the chocolate and place on the mat. 
Sprinkle with salt as it dries. (I got just a touch too much salt.)
Now onto the Turtle molds.  Put just a small amount of chocolate in the base of the mold.

Place the Pecan in first (round side to table flat side up) then put the caramel on top.

Fill the rest of the mold with melted chocolate.

As I said, not a good choice for chocolate.  It got a little messy.  But I melted the white chocolate and drizzled it over the top.

Catch those turtles and eat 'em up!

I refrigerated the candies to help them set.  Now it is time to wrap them again and share them with friends. 
Although I miss making candies, I don't have close access to a store with supplies anymore.  So it makes it more difficult.  I might need to pull my molds out more often.  What do you think?
