Up North visiting dad 6/24/2018

Dad isn't doing well.  So before I started traveling, I decided to visit him up North.
Maybe it is a hereditary thing? I had to stop to take pictures of flowers in the road ditches.
BIRD! Don't look for it, that simply means I was distracted and didn't finish the post.
We stopped at a walking path that would give us access to walk across the new bridge over the old mine. 
They thought ahead and created a fabulous walking lane. If someone jumps from this bridge,  it was very intentional. 
The views are absolutely amazing. 
The land is recovering from the mining operation. 

I was called home from my work travel that week. Dad passed away 6/30/2018.

Rhubarb crunch

June 3rd was a perfect time to make rhubarb crunch.  It is my recipe of cups. I made it in my 9" cake pan.
I layer the bottom with a healthy layer of rhubarb.  Then one cup of sugar.
I box of straberry jello helps set it. 
I cup flour, 1 cup brown sugar, 1 stick of butter. 
Ooops! I almost forgot the 1 cup oatmeal and 1 Tablespoon cinnamon. 
After I mixed the crumble mix together I put it onto the top and put it in the oven.
It came out of the oven bubbling and delicious. 

Vegetable jam

June 3rd, 2018 I made some fruit jam for Dale.  Too much sugar for me.
I chopped rhubarb.  Yes, rhubarb is a vegetable and not a fruit. I added the sugar and a touch of water to cook the rhubarb. 
It takes a while to cook together. 
It takes patience because you need to stir from beginning to end. 
Look at the difference once the rhubarb has softened. 
I chose to add strawberry jello to help it setup. I know, it is cheating a bit but it works so well!
