Coconut banana chocolate chip cookies


Coconut banana chocolate chip cookies
I am trying something new.  I have seen a few random recipes on the internet.  Most of them call for oats or almond flour.  I wanted to try it with coconut flour.  This is what I used:
2 bananas
2/3 cup raw coconut flakes
2/3 cup coconut flour
10 chocolate nips chopped into chips
1 egg
I ran the nutritional facts through Calorie Count recipe maker to find out that each cookie was 94 calories.  At a glance it looks like there is a good mix of fat, protein and natural carbs.



When I buy chocolate for a treat I often buy Lily's because it is made with stevia instead of sugar.  Even normal dark chocolate is sweetened some with sugar.

If you aren't going to use chocolate sweetened with Stevia just buy dark chocolate or semi-sweet chocolate chips.  You don't need to use very many.  I prepared my chocolate before I started working with the bananas.  I wanted everything ready so that the bananas would not brown.

I mashed two bananas and mixed it with unsweetened coconut flakes.  Yes, I goofed up and added to coconut flakes too early.  But it worked.

Yes, the world is better with chocolate.  After mashing the bananas in with the coconut, I stirred the chopped chocolate nibs.  I could not resist.  I tasted the dough at this point.  I was tempted to eat is this way.  Hmmm. Maybe someday I should try just freezing small balls of this.  ????

Instead of doing that, I added coconut flour to make a cookie that needs some baking.  Coconut flour doesn't taste much like coconut.  Since I like the taste of coconut, I decided to add those coconut flakes.  (I just took a break from blogging to eat a cookie.  The coconut flakes were a good idea.)

The dough felt a little crumbly to me.  I decided to add one egg as a binder.  I think if I would have only used 1/2 cup of coconut flour that it would have been better.  At the same time, adding a little bit of protein has never hurt a cookie.

I used a large Pampered Chef scoop to create cookie balls.  I should have smashed them down a bit for character.  Without any butter/margarine in them, they held their shape.  (I bake on stones instead of cookie sheets.)  Then bake for 15-20 minutes.  My coconut flakes turned brown but otherwise they didn't change much.

The house smells fabulous!  It is going to be difficult to eat only one or two cookies at a time.  Because they taste so good!  Have you ever had a banana boat when you've been camping?  You cut a wedge out of a banana and stuff it with chocolate chips and miniature marshmallows.  Then you replace the skin and wrap it in foil before putting it on the campfire.  I was amazed that even without the marshmallows, these cookies are very sweet.
