Mini (110 cal) chocolate cheese cake bites

Mini Chocolate Cheese Cake Bites
On the inside of the Philadelphia original cream cheese block was a recipe for mini cream cheese cakes.  Now I saw mini and I thought of my mini muffin pans - when I started dishing up the first dozen, I realized that I was wrong in that assumption.  But that is okay because it works out if you want a little or a lot of chocolate.

Almond Meal Crust
The original recipe was VERY loaded with carbs and sugar.  So here is my revised recipe:
Crust:
2/3 cup almond meal (ground almonds)
2 Tablespoon butter (melted)
1 mini scoop of stevia powder
Combine together and press onto the bottom of the liners

Looks good enough to eat already!
Filling:12 ounces cream cheese
1 teaspoon vanilla
2 eggs
2/3 cup whipping cream
2 Tablespoons 100% dark chocolate powder
15 drops stevia liquid
Beat together slowly at first and then on high until stiff peaks form.  Drop on top of crust. Bake at 325 degrees F for 25 to 30 minutes or until centers are almost set.

I had such a hard time not popping one of these in my mouth!
Cool completely. Refrigerate 2 hours.
