Food Glorious Food!

Switching from a low calorie/low fat diet to a low carb/high fat diet has created a bit of food surplus.  Some of it I have had to just throw away because they are so heavy in carbs.  But I had two 2 oz turkey burgers in the freezer so I decided to use them for lunch. 

In my plan ahead, today was the day to fry the bacon 2 pieces at a time into small pieces.  So I planned 3 strips of bacon for my lunch.  As I thought about it I said, "Ah ha! I can cook the turkey patties in the bacon grease left at the end."  Even with that the results were protein 64% and fat 35% with 1% carb.  It is very difficult to get 80% of the calories from fat.

The base of the stack started with a thin turkey burger, 1/8 cup cheddar cheese, and two strips of fried bacon.

Adding Avocado
 I carefully added about a tablespoon of avocado across the top.  I wish that I had a piece of lettuce to wrap it in at this point and eat it right here and now!

I added another thin 2 ounce turkey burger on the top and enjoyed my delicious 340 calorie lunch.  I have done some more cooking this weekend.  So I will share those foods with you over the next few days.  I hope that you don't drool too much.  As you can see I am having a difficult time changing my paradigm from low fat to high fat.  But I can tell that I am feeling better.

For those who want an update on my 5 day fat fast, I was pleased with the results.  My blood sugars dropped to a boarder-line diabetic level.  They are still a tad high but the books that I studied said that it is not unusual to need to be on a high fat diet for several weeks before the levels are back to normal.  Over the 5 days I lost 7 pounds.  (After increasing my calories from 1000 to 1500 per day, I lost another 1.5 pounds.)  I am very encouraged with the results.
