Happy Labor Day

This is supposed to be a day free of work...no work.  So why didn't I get 5 minutes to sit down and rest?  So much to do and so little time.  We had a very unconventional labor day meal.  I started by making coconut cornbread as inspired by Iron Chef America. 

I didn't have a recipe so I took a cornmeal box mix and backed off the milk 1\4 cup.  I added a small can crushed pineapple in natural pineapple juice (that is where the extra liquid is made up.) One cup shredded coconut and a teaspoon of coconut flavoring. I had to cook it a little longer than the box directed.

Then I chopped up the leftover chicken, mixed it together with the leftover mushrooms and onions from Sunday night, 2 teaspoons of garlic to that I added homemade spaghetti sauce base, 1\4 cup dried italian seasoning. A nice mix over spaghetti noodles with mozzerella cheese over the top. 

Leftovers can be flavorful.  :^)
