Oatmeal Coconut Cookies (modified)



Special Request resulted in these delicious cookies.
Left: Oatmeal/Raisin/Coconut/Pecan Cookies
Right Oatmeal/Chocolate Chip Cookies
You can tell by this recipe card that this isn't the first time I've made it.  So here are my changes ~ this time. ;^)

The original recipe - don't write it down

Changes from the beginning:
1/2 cup Real Butter (softened)
1/2 cup shortening
1 cup Honey (no sugar)
cream together


2 eggs (I cheat and whip them in the bowl)
Add: 1 tsp Vanilla
1 tsp baking powder
1/2 tsp baking soda
1 tsp salt
(I forgot to add the tsp nutmeg.)
Stir together

Add 3 Cups quick rolled oats and stir
I added 1 1/2 cups wheat flour and stirred together


I separated 1/3 of the dough off for a special request.

I added 1/4 cup more flour to the small portion and 1/2 cup semi-sweet chocolate chips and mixed together.

(Sssshhh don't tell anyone. But I had to sample the dough.)
Using my small scoup, I placed the dough on my baking stone. Then I place in the oven at 375 degrees.
1/2 cup chopped pecans,
1/2 cup coconut
1/2 cup raisins
Mix together
Time for a Taste Test. (shh)

Don't forget the first batch in the oven.
Scoop the new mixture and put on the stone with a 1/2 pecan on the top (I only put the pecan on half of the cookies.)

Bake until golden brown and remove from the stone.
Yeah ~ just try not to eat them while they are cooling.  M-M delicious.
